Lentil soup with coconut, curry and spinach

I think I have never actually done proper food blogging before with recipes. I do take mobile photos of my food sometimes but they are more likely to end up on instagram than on a blog post. However, I felt like taking photos this weekend when I cooked a lentil soup. A disclaimer: the recipe for this soup is purely improvised. I used to be always follow recipes but in recent years the way I cook food is more or less improvised. I still follow recipes for baking recipes though.

For this soup you’ll need:
1 onion
1 vegetable bouillon
5 carrots
4 dl water
500 ml coconut milk
2-3 dl green lentils (depending on how thick soup you want)
3-4 bay leaves
curry, fresh spinach + other herbs if you like

First fry the cutted onions with some oil and when they are nice and yellow, cook the bouillon in the water in the same pot. Then cook the carrots for like 10 minutes, then put in the lentils and coconut milk along with the bay leaves and curry. I think I put like 4 tea spoons of curry or more. Then the soup will be cooked in 20 minutes on medium temperature. The fresh spinach or other herbs are put in in the end.

Jag tror jag faktiskt har aldrig matbloggat tidigare med recept och allt. Nu fick jag lite inspiration att göra det när jag svepte ihop en linssoppa under helgen. Det här receptet är improviserat så man kan fritt fram modifiera det enligt sitt eget tycke.

Du behöver:
1 lök
1 grönsaksbuljong
4 dl vatten
5 morötter
500 ml kokosmjölk
2-3 dl gröna linser (beroende hur matig soppa man vill ha)
3-4 lagerblad
curry, färsk babyspenat + andra örter om man vill

Börja med att hacka lök och stek i olja tills det får en gyllenbrun färg, därefter koka buljongen i vattnet i samma kastrull. När buljongen har lösts upp, koka sedan de hackade morötterna i typ 10 minuter. Sedan i med kokosmjölk, tvättade linser, lagerblad och sisådär 4 teskedar med curry eller fler. Sedan ska soppa kokas på medelhög värme i ungefär 20 minuter. De färska spenatbladen eller örterna kan man lägga till i slutet.
